Whilst searching the web for more inspired London cab related companies I stumbled across Running on Empty, a mouth wateringly good idea by award-winning Dumfries arts collective The Stove Network.
The taxi was part of Scotland’s premier art and craft open studios event, Spring Fling and involved a traditional black cab touring Dumfries and Galloway serving meals made with delicious local ingredients.
This was no ordinary black cab either, The Stove Network converted it to run on used cooking oil collected from fish and chips shops across the area and it has its own chef.
Last year Spring Fling, Scotland’s Year of Food and Drink, Running on Empty saw catering duo Jade Norcross and Craig Middleton preparing everything in the black cab from a seaside barbeque at Port William to canapés and smoked mackerel lunches at Brydekirk.
The cab was converted by artist David Ralston of Dumfries-based artist led organisation The Stove Network, who also collected the fuel from chip shops across the area.
